Great food and flavour starts with the freshest and best seasonal ingredients. We always buy the most ethical and best quality produce we can find. We only work with suppliers who are passionate about their product as we are ours.
Our beef is sourced from the best British grass-fed herds and it is dry-aged for a minimum of 28 days. Our chefs have even been to visit them. Our butchers, Aubrey Allen, hold a Royal Warrant, having supplied HM The Queen for many years. Our pigs are happy pigs from Jimmy Butler’s farm (recently voted Pork farmer of the year) and you will only find the best free-range chicken and eggs on our menus.
Our menus, created by each Head Chef, mix plenty of classic and comfort dishes with more contemporary ones.
Our places are real pubs as well as great gastro pubs. We serve well-kept ales on tap alongside Continental beers and lagers. We are as keen to wow you with the quality of our house Merlot as with a single estate Pinot Grigio from Allegrini, and we also serve exceptional spirits at pub prices, selecting on quality and not familiarity.
Our pouring gin is Beefeater, our Vodka is Absolut. We serve Havana Club, Jameson’s and Bulleit too.
We care a lot about every wine on our list, from the humblest house to the most exalted. We blind-taste it regularly to ensure we are serving the best possible quality. We use award-winning suppliers with different specialities to pack as much variety as possible into a list described in the Michelin Guide as “small but well-chosen with a good selection by the glass.”
The importance of good coffee is easy to forget but we don’t. Our coffee is sourced from Union Hand-Roasted, who apply ethical standards as strict as fair trade to their small producers. And because they hand-roast the beans in London weekly you won’t get fresher without visiting a roastery.
